Real Food Cranberry-Lemon

Ingredients :

  • 1/2cupfreshorganic cranberries
  • 1/2cuplow-carb sweetenersuch as Dietz Sweet (or an equal amount of raw honey)
  • 1/4cupwater
  • 1/2cuplemon juicebottled or fresh
  • sparkling mineral water

Instructions :

  1. To a small saucepan, add the cranberries, sweetener of choice, and water.
  2. Turn the heat to high and bring to a boil.
  3. Reduce the heat to a gentle simmer, and use a potato masher to mash the cranberries.
  4. Cover and simmer 10 minutes.
  5. Remove from the heat.
  6. Place a fine mesh sieve over a glass bowl or Pyrex measuring cup.
  7. Pour the cranberries into the sieve, then use the back of a spoon to press the liquid through the sieve, catching it in the bowl or measuring cup.
  8. Discard remaining cranberry solids. You may notice that the cranberry has begun to “gel”as it cools. This is normal and due to the natural pectin in the cranberries.
  9. Add the lemon juice to the cranberry mixture and stir to combine.
  10. Place 2 tablespoons of the cranberry-lemon concentrate in the bottom of pretty low-ball glasses.
  11. Add ice.
  12. Pour sparkling water over the ice.
  13. Garnish with lemon and/or fresh cranberries.
  14. Enjoy!
